Ingredients:
- breadcrumbs
- grated Parmesan cheese
- 2 eggs, beaten
- marinara sauce
- 1 large head of cauliflower, cut into florets
- shredded mozzarella cheese
- salt and pepper
- Olive oil for brushing

Instructions:
1. Prepare the Grill: Preheat your grill to medium-high heat, around 375-400°F (190-200°C).
2. Prepare the Cauliflower: Rinse the cauliflower florets under cold water and pat them dry with paper towels. Season the cauliflower florets with seasoning.
3. Breading Station: In a shallow dish, mix together the breadcrumbs and grated Parmesan cheese. In another shallow dish, beat the eggs.
4. Bread the Cauliflower: Dip each cauliflower floret into the beaten eggs, ensuring it's fully coated. Then coat the cauliflower in the breadcrumb and Parmesan mixture, pressing gently to adhere the breadcrumbs.
5. Grill the Cauliflower: Brush the grill grates with olive oil to prevent sticking. Place the breaded cauliflower florets directly onto the grill grates. Grill for about 5-7 minutes per side, or until the cauliflower is tender and the breading is crispy and golden brown.
6. Assemble the Parmesan Cauliflower: Once the cauliflower is grilled, transfer it to a cast iron dish or tray. We’re using the Napoleon cast iron griddle pan. Spoon marinara sauce over each cauliflower floret. Sprinkle shredded mozzarella cheese on top of the marinara sauce.
7. Finish Cooking: Return the dish or tray with the cauliflower to the grill. Close the grill lid and cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.
8. Serve:Carefully remove the cauliflower parm from the grill. Serve hot as a delicious and nutritious appetizer or side dish.
