Indulge in the savory delight of Queso Chicken Rolls, a perfect blend of grilled chicken, zesty lime, and a rich queso mixture. This recipe, seasoned with SPGO BBQ and taco spices, offers a flavorful twist wrapped in a crisp tortilla.



Ingredients:
⁃ chicken breast
⁃ lime
⁃ ZOE Olive Oil
⁃ ZOE Salt
⁃ ZOE Pepper
⁃ Tortillas
⁃ Smokin Jon’s SPGO Bbq seasoning
⁃ Taco seasoning
⁃ Queso mixture: (combine on heat)
                  ⁃ 2 Tbsp butter
                  ⁃ 2 Tbsp flour
                  ⁃ 1 cup milk
                  ⁃ shredded cheddar (1.5 cup)
                  ⁃ 1/4 tsp salt
                  ⁃ 2 tbs salsa
                  ⁃ 1/4 tbs taco seasoning

Instructions:
1. Preheat grill to medium 350-400 F and oil grids well
2. Prepare both sides of chicken and season with lime, SPGO spices and taco spices
3. Grill on medium about 5 min each side
4. Prep queso mixture and let cool
5. Remove chicken from grill once internal temp is 165 F
6. Finely chop chicken and mix in large bowl with queso mixture
7. Fill tortillas with mixture and wrap into burrito shape
8. Oil both sides of wraps and place on the grill to toast and crisp both sides for another few minutes
